
The evolution of Marcelo Batata’s kitchen has been quick and somewhat unique starting with Peruvian-fusion comfort food and lending itself to what it offers now: traditional Peruvian cuisine with avant-garde influences. It has strong influences from the Novo-Andina and Criollo kitchens as well as light touches from Mediterranean and Oriental cuisines. The priority in the restaurant is to utilize Peruvian ingredients that inspire the creation of new dishes and in that way contribute in a simple way to the evolution of Peruvian gastronomy.
